Hello Everyone! Ever since I got into sourdough baking, I’ve started a weekend routine. Each weekend I have been taking Fernandough (my sourdough starter) out of the fridge on either Friday or Saturday night. I discard some of my starter, feed him 60 grams of bread flour and 60 grams of water and then place a fuzzy sock over the jar to help him rise throughout the night.
I like to make the most of my time on the weekends since it’s the only time I have to bake. I usually look up two recipes I want to make on Pinterest throughout the week to make sure I have all the ingredients. Then, once the weekend rolls around I can relax and get into my baking zone. My second attempt at sandwich bread was also paired with making sourdough biscuits. This ensures you don’t have any discard piling up. The recipe I used was called “Easy Sourdough Discard Biscuits {Buttery & Flaky}” from the website hopewellheightsblog.com.

This recipe called for 1 cup of sourdough starter, 2 1/2 cups of all-purpose flour, 1 teaspoon of salt, 2 tablespoons of sugar, 4 teaspoons of baking powder, 3/4 cup of cold butter, 1 whole egg, 1/2 cup of milk, and 2 tablespoons of butter (for your pan).
I don’t have a mixer, but if you do then I recommend using it because your hands WILL GET TIRED! First, you need to preheat the oven to 425 degrees. Then we mix our ingredients being careful not to over mix. The recipe recommends using a rolling pin, but if your like me and haven’t purchased one yet then flatten it out as best you can with the palm and heel of your hand. I cut my biscuits out using a jar lid, but they came to a little small in size. This idea would work better with a bigger size jar lid. Anything you can use to make it a circle would work in my opinion haha.
The recipe only makes 8 servings according to this recipe. However, if I’m putting this much work into homemade biscuits…I don’t want to end up with just 8! I ended up making 19 biscuits. I think I went a little overboard with the how many I wanted because they came out a bit small. I believe you can get more than 8 decent sized biscuits, but I wouldn’t stretch it to 19 like I did.

Y’all! They turned out so good! They were on the small side but very delicious! Once you’ve tried sourdough biscuits you won’t want to go back to the store bought rolls. I out some butter on one side and apple butter on the other and it was very good.

I wanted to make a lot of biscuits because a few were going with our breakfast that morning and the rest I made into sausage, egg, and cheese breakfast sandwiches.
