Hello Everyone! I roped my husband into helping me with another fun recipe! Anytime I think of sourdough, I think of sweets. Well, let me tell you!!! Pinterest has so many recipes for sourdough baking and when I came across homemade ravioli…I could NOT pass this up!

The recipe I ended up using was from Homemade Food Junkie and was called “Delicious Sourdough Cheese Ravioli.” If it says delicious in the name then it’s got to be good right?? I will be adding the direct link to my links and supplies page so make sure you check it out!

The ingredients you will need are of course your sourdough starter, all purpose flour, 2 eggs and sea salt. Those are all you will need for the ravioli dough. For the filling, you will need ricotta cheese, fresh grated Romano cheese, 4 strips of prosciutto chopped, 1 egg, ground nutmeg, and salt and pepper to taste.

The first step is to pour out your flour and place your eggs in the middle. You then want to smash your eggs and add your starter to the middle as well. I then folded the flour and egg mixture together until everything was well mixed. You need to do this slowly because when I did it fast, the starter was trying to run off the counter.

I was using flour that had been stashed in my pantry for a while so I’m not sure if that was the reason it ended up flaky, but I was not getting the results needed for it to come together into a ball. I ended up adding another egg, a little water, and a little butter to get it to be a ball consistency. If you get yours right on the first try then let me know! I may just need to buy fresh flour.

Once I got my dough into a nice ball, I kneaded it for a few minutes and then placed it in a bowl to rise.

I covered the bowl with my Esembly bowl cap and let it sit for 30 minutes.

This is where I had my husband help me. While I rolled the ravioli dough out, he mixed up the filling. I didn’t have a rolling pin so I floured the sides of a green bean can and used that instead. The dough wasn’t getting as stretched out as it should have been. I may try to make this again when I have a rolling pin to see the difference it makes. The recipe had me divide the dough into two balls, one for the bottom layer and one for the top.

After the filing was made i placed little dollops on the dough until it was all gone. I then placed the other layer of dough on top and used a pizza cutter to cut into small squares,

This recipe took a lot longer than I expected and at this point we still had to squish all the ends down with a fork and boil them in batches. Like you boil macaroni, we boiled the ravioli until it was done. Please see the link on my links and supplies page for a more detailed walk through. I forgot to buy sauce so we couldn’t enjoy it that night. I did try a plain ravioli and it was very good!

I ended up buying three jars of tomato basil sauce since I made so much ravioli. It was definitely on the thicker side and I think that’s because I couldn’t get the dough rolled out enough without a proper roller. This homemade ravioli recipe was very good and we ate on it for several days. Stay tuned to see what we make next!
