Hello Everyone! The new year is sneaking up on us, but this recipe is the best way to kick off 2026. When you wake up from sleeping in on Thursday, I hope you want to make pancakes! If you do, then follow along to hear how my sourdough pancakes turned out.
The recipe I used was from tastychow.com called “Fluffy Sourdough Discard Pancakes.” I personally didn’t like the outline of this recipe since it’s not as straightforward as online recipes usually are. I am going to outline it a little differently here so hopefully this will help you when you make them!
The ingredients you need are:
- 1 cup Sourdough Discard
- 1 cup All-purpose Flour
- 1 tbsp. Sugar
- 1 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/2 tsp. Salt
- 1 cup Milk
- 1 Large Egg
- 2 tbsp. Butter OR Oil (You will need more for cooking)
Supplies Needed:
- 2 Mixing Bowls
- Whisk or Baking Spatula
- 1/4 Measuring Cup
- Cooking Spatula
- 1 Cookie Sheet Pan
In one bowl you will mix your dry ingredients and your second bowl will hold all your wet ingredients. I mixed mine in with a silicone baking spatula, but a spoon or whisk would work too. Once mixed thoroughly, fold your wet ingredients in with your dry ones. The recipe calls for 10 to 12 folds. You don’t want to over mix so when you don’t see anymore dry patches of flour that’s when you know you’re done.

Now it’s time to start cooking these delicious pancakes! Of course you’re welcome to add in other ingredients to enhance the flavor such as cinnamon, chocolate chips, blueberries, etc. This was my first time making this recipe so I kept it simple and didn’t add anything else to the mix.
I used a 1/4 cup to spoon the batter onto my Faberware grill. I used this so I could cook three to four pancakes at a time. If you’re like me and don’t want to stand on your feet forever then I recommend using one of those or a similar flat cook top. These will cook like regular pancakes.

I made about 8 or 9 pancakes with this recipe. Once they were done cooking, I placed them on a cookie sheet and put some butter on the tops. These were soooo good! I topped mine with maple syrup, but I’m sure they would be good with peanut butter or a topping of your choice.

The link to the recipe I followed will be listed on my links and supplies page. I hope you all enjoy these yummy pancakes and follow along to see what I make next! Happy New Year!
Sincerely,
Tiara
